Recently, I shared my fail in trying to decorate Christmas cookies using natural coloring instead of artificial food coloring. The cookies still taste delicious. Tasha and I are planning on trying some other natural food coloring options.
But, making Christmas cookies isn’t so much about how beautiful or even tasty the cookie turns out.
It’s about the time spent with family.
So when IronFish came home and asked if we could make him cookies for his office potluck the next day, Tasha put him to work.
This time of year is busy for everyone. We haven’t gotten to finding a natural food color we can make (there are ones we can buy, and they are quite pricy with a short shelf life).
My plan for this post had been to share a successful version of our gluten-free frosted cookie. Or updating an old favorite to be gluten-free so our whole family can enjoy it.
But, it didn’t work out that way.
And that’s okay.
The cookies still taste great, but more importantly, Tasha had a blast baking cookies with dad.
And that’s what baking Christmas cookies really should be about.
Gluten-Free Frosted Christmas Tree Cookies
This time, we listened to the “pro baker” of the house.
And used the tree-shaped cookie cutter!
We kept it simple and enjoyed the time spent together.
Gluten-Free Frosted Cookies
Ingredients
- For the cookies:
- 2 cups gluten-free flour
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup sugar
- 3 tablespoons powdered sugar
- 1 stick of soft butter
- 1 egg
- 1 teaspoon vanilla
- For the frosting:
- 3 cups powdered sugar
- 1 stick of softened butter
- 1.5 teaspoons vanilla
- 1-2 tablespoons milk
Instructions
- Preheat oven to 350 degrees
- In a bowl, whisk flour, baking powder, salt, and sugars.
- Blend in the butter, eggs, and vanilla
- Roll dough out and cut into shapes.
- Bake 6-8 minutes.
- Mix together powdered sugar and butter.
- Add vanilla and gradually add milk as needed to the frosting.
- When the cookies are completely cool, frost!
